So I have fully thrown myself into the Ina Project in the last few weeks. Due to a short ice storm here I have had two long weekends in a row so I've had plenty of time for cooking. Here is what I cooked up...
Chicken Stew and Biscuits. Barefoot Contessa Family Style. I made this and had my mom and sister over. It was delicious. The stew did have several steps but turned out great and you cook the biscuits right on top and they were perfect. Also it reheated very well and left us with plenty of leftovers. Definitely will make that again.
String Beans with Shallots, Barefoot Contessa Family Style. Not my favorite. I think I cooked the green beans too long.
Chicken with Shallots, Barefoot Contessa How Easy Is That? Absolutely delicious! Fairly simple and easy.
Oven Fried Chicken, Barefoot Contessa Family Style. I learn something every time I cook and I have learned so many cooking techniques through this series but especially with this recipe. Everyone in the south has a different way of frying chicken and one thing I always have struggled with is how to know when its done. This recipe is about as foolproof as you can get. After soaking the chicken in buttermilk for several hours, you bread the chicken and then brown in on the stovetop in oil and then put it in the oven to finish cooking. Chicken was super moist. My only complaint against the recipe was that the breading is only plain flower and the buttermilk makes the skin and crust very thick so I would have liked some seasoning in the breading mixture. Nevertheless, this is how I will make fried chicken forever.
Orange Pound Cake, Barefoot Contessa Family Style. This was awesome. My husband ate piece after piece. It's really easy and very pretty. You could make these and give them as gifts.
Challah French Toast, Barefoot Contessa Family Style. Delicious! I had made this before but when you use the challah the bread is really thick and dense and it's just incredible.
French Toast Bread Pudding, Barefoot Contessa How Easy Is That? This was really really good. I made it for our family and it was excellent and everyone raved. It does take a while and you need a roasting pan. Just an FYI.
Easy Weeknight Bolognese, Barefoot Contessa How Easy Is That? Super easy and super good. Loves it.
Spicy Turkey Meatballs and Spaghetti, Barefoot Contessa How Easy Is That? Makes an enormous amount of food but the meatballs are delicious and very different from your traditional meatball.
If you want to buy one of these cookbooks double check that I am right on which recipe is out of which cookbook. I am questioning myself now and I'm not 100% sure on the Chicken with Shallots.
